My daughter wanted a dolly and dinosaur birthday party hence the pet dinosaur cupcakes that went along with the Dolly Varden cake. Cupcakes were Women’s Weekly cupcake recipe with rice milk and Nuttelex used as a substitute. We used a Women’s Weekly vanilla butter cake recipe using rice milk and Nuttelex as substitutes. We ordered a Dolly Varden cake tin and bought a Barbie that had a plastic top as part of the body so need to ice here. We iced the Dolly Varden with buttercream icing that used Nuttelex instead of butter and to colour pink we added a couple of teaspoons of juice from a tin of beetroot (can’t taste this). Cupcakes are iced with glace a simple pure icing sugar and water mix and topped with cupcake rings that we ordered online.
