Baby Cake by Cally

Baby Cake

“My daughter wanted a baby cake so I adapted one out of the Women’s Weekly birthday cake cookbook.  I made my own gluten and dairy free loaf cake.  I made a dairy free icing and coloured it with a strawberry syrup which I made, as we are ok with salicylates.  But you could use Hoppers pink or I think it would even look fine with white icing.  Then I decorated it with a baby, lace, ribbons, pipe cleaners and material.”

Recipe is in the comments.  😀

  1. Hi Trish
I adapted a pear cake recipe that I use all the time.

    Vanilla Loaf Cake
    90g nuttelex
    3/4 cup sugar
    1 teaspoon vanilla essence
    3 eggs
1 1/4 cup gluten free self raising flour
    pinch salt

Beat the nuttelex, vanilla essence and sugar until creamy.
Add the eggs and mix until combined.
Add the flour and salt. Mix until combined.
Pour into a lined loaf tin and cook at 180 degrees for 35-40 minutes.

I hope this works for you. If you want to make it as a pear cake instead, I only use 2 eggs and leave out the vanilla essence and add 2 mashed pears and stir through with a wooden spoon.
